Let me share my meal plan with you so you don’t need to think about what to make this week! I am eating lower carb currently, so most of my meals are going to be a little bit on the lower carb side. You can modify any of these to make them higher carb or more balanced by adding rice, quinoa, or potatoes, tortilla wraps etc. But if you’re like me and wanting to lean out in time for the 4th of July festivities, this is the meal plan for you! This makes it easy to adjust for the family by having a rice, grain, or carb option available for them, while keeping it lower carb for you without having to make two separate meals.
Breakfasts:
Sheet Pan Scramble: veggie loaded, protein packed and ready for the week
Cottage Cheese Egg Cups: high-protein, low carb, and super satisfying with a mushroom and onion twist.
MEAL PREP / DINNERS:
Turkish Pasta- bold, spiced, and delicious.
Cabbage and Kielbasa Stir-fry- low carb comfort in a skillet
Meat Marinara over Cottage Cheese- Creamy, cheesy, protein magic.
Bell Pepper Sloppy Joes: no bun, no bloat, but ALL the flavor.
SNACKS:
Salmon Seaweed Snack- omega-3 rich and a crunchy protein packed lil seaweed taco
Spicy Pickled Eggs- gut boosting + crave-worthy and full of spicy bold flavors
DRINKS:
Strawberry basil wellness shots- anti-inflammatory and immune boosting
Beet Watermelon Juice- hydrating, refreshing, and heart healthy all in one!
Every week I will share my meal plan that includes meal prep / dinner options. Almost all of my dinner recipes can also be prepped for meal prep. They will also include some snack and drink options, and breakfast options too!

This week the meal plan includes wellness shots and fresh juices. With the fourth of July coming up, these are the PERFECT mocktail or cocktail that are fresh, refreshing, AND healthy. Giving off that summer fresh vibe packed with nutrients! Take them as a wellness shot, or drink it as a juice, OR turn it into a mocktail by adding some ice and garnish it! They are freezer friendly too for those who want to make a bigger batch and freeze ahead of time. Just remember that they do expand when frozen so leave a little head space in the containers you freeze them in, so they don’t explode all over your freezer. I have had that happen, and it’s not fun.
And what about the pulp from the juices?? Save those and add to soups, smoothies, or sauces for an immunity and fiber boost! Toss them in an ice cube tray and pop out anytime you need an extra nutritional boost. I also like to add the pulp to my energy balls or teas.
